Curated Spoon

The kitchen

A chef-led kitchen, not a production line.

Our culinary team writes the menu, cooks it, and tastes it — the same three people, every week.

Standard of cooking

If it would not go out in a dining room, it does not go in a box.

Every dish is developed the way a restaurant develops a menu: cooked, tasted, argued about, adjusted, cooked again. Only then is it scaled — and scaling is only allowed where it does not cost flavour.

Sauces are reduced rather than thickened. Grains are cooked in stock. Vegetables get direct heat. Salt is adjusted by taste, per batch, by a cook — never by a formula alone.

The team

Who cooks your week.

A small brigade, led by Chef Sebastian.

  • Chef Sebastian

Culinary Director — menu and technique

Writes the weekly menu, sets the seasoning standard, and tastes every dish before it ships.

  • Chef Mateo Ferrante

Sous Chef — proteins and braises

Runs the roasting and braising station. Believes a good jus makes a vegetable taste better too.

  • Chef Noor Haddad

Chef de Partie — vegetables and grains

Cooks grains in stock, dresses them warm, and treats vegetables as the centre of the plate.

Sourcing

Ingredients are chosen for flavour first and nourishment second — never the other way around. Specific supplier relationships, seasonal calendars and provenance claims will be published here as each is confirmed. We would rather say nothing than say something we cannot evidence.
